Description

Quick and flavorful Thai peanut chicken wraps filled with crunchy veggies, tender chicken, and a creamy peanut sauce, perfect for weeknight meals or gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, sliced
  • 1 cup carrots, shredded
  • 1 cup cucumber, sliced
  • 2 cups lettuce leaves
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ginger, grated
  • 4 large tortillas or wraps

Instructions

  1. Mix together the peanut butter, soy sauce, honey, lime juice, garlic, and ginger in a bowl to create the peanut sauce.
  2. Combine the shredded chicken, sliced bell peppers, shredded carrots, and sliced cucumber in another bowl.
  3. Spread a generous amount of the peanut sauce onto a tortilla.
  4. Add a handful of the chicken and veggie mixture on top of the sauce.
  5. Place a few lettuce leaves on top for added crunch.
  6. Roll the wrap tightly, tucking in the ends as you go.
  7. Repeat with the remaining tortillas and filling.
  8. Slice the wraps in half and serve with extra peanut sauce on the side.

Notes

Store uneaten wraps in an airtight container in the fridge for up to 3 days.
