- 2 cups cooked chicken, shredded
- 1 cup bell peppers, sliced
- 1 cup carrots, shredded
- 1 cup cucumber, sliced
- 2 cups lettuce leaves
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon garlic, minced
- 1/2 teaspoon ginger, grated
- 4 large tortillas or wraps
Instructions
- Mix together the peanut butter, soy sauce, honey, lime juice, garlic, and ginger in a bowl to create the peanut sauce.
- Combine the shredded chicken, sliced bell peppers, shredded carrots, and sliced cucumber in another bowl.
- Spread a generous amount of the peanut sauce onto a tortilla.
- Add a handful of the chicken and veggie mixture on top of the sauce.
- Place a few lettuce leaves on top for added crunch.
- Roll the wrap tightly, tucking in the ends as you go.
- Repeat with the remaining tortillas and filling.
- Slice the wraps in half and serve with extra peanut sauce on the side.
