Ingredients
2 pounds fresh green beans, trimmed
2 tablespoons salt
Ice water bath
3 tablespoons unsalted butter
1 pound cremini mushrooms, sliced
3 cloves garlic, minced
1/4 cup all-purpose flour
2 cups milk
1 cup heavy cream
1 cup chicken or vegetable broth
1 teaspoon soy sauce
1 teaspoon fresh thyme
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon sea salt
Pinch of nutmeg
2 large yellow onions, sliced
1 cup flour
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon cayenne
Vegetable oil
Optional: 1 cup cheddar, 1/2 cup Parmesan, 2 tbsp parsley
Instructions
1. Blanch green beans in boiling salted water 4-5 mins, shock in ice bath.
2. Drain and dry beans.
3. Sauté mushrooms in butter until caramelized.
4. Add garlic, sprinkle flour, whisk in milk, cream, broth, and seasonings.
5. Fry onions until golden and crispy.
6. Mix beans with sauce, place in baking dish, top with half onions.
7. Bake 25-30 mins at 375°F, add remaining onions last 5 mins.
8. Let rest 5 mins before serving.
Notes
Can assemble up to 24 hours ahead without topping.
Dry beans thoroughly.
Make extra crispy onions.
Store leftovers 3-4 days in fridge.
