Ingredients
1 gallon (16 cups) fresh apple cider

3 star anise pods
1 large orange, sliced into rounds
1 lemon, sliced into rounds
¼ cup pure maple syrup or honey
1 teaspoon whole black peppercorns (optional)
1 vanilla bean, split lengthwise (or 1 teaspoon vanilla extract)
3–4 cardamom pods, lightly crushed (optional)
2-inch knob fresh ginger, sliced (optional)
Instructions
1. Pour entire gallon of apple cider into a large pot or Dutch oven (6-8 quart capacity).
2. Lightly crush whole spices (cinnamon sticks, cloves, allspice, star anise, peppercorns, cardamom) with the back of a spoon to release oils.
3. Add all whole spices to the cider.
4. Wash orange and lemon thoroughly. Slice into ¼-inch rounds and add to the pot with peels on.
5. If using vanilla bean, split lengthwise and scrape out seeds. Add both seeds and pod to cider.
6. Add fresh ginger slices if using.
7. Drizzle in maple syrup or honey. Stir gently to distribute ingredients.
8. Place pot over medium-high heat and bring to a gentle boil, stirring occasionally.
9. Once boiling, immediately reduce heat to low and maintain a gentle simmer.
