Ingredients
Fresh clams
Potatoes, diced
Onion, chopped
Celery, chopped
Garlic, minced
Butter
Flour
Seafood broth
Heavy cream
Salt & pepper
Fresh herbs (thyme, parsley)
Instructions
1. Rinse clams thoroughly.
2. Sauté onions, celery, garlic in butter.
3. Add flour to make roux.
4. Gradually add broth and cream.
5. Add potatoes and cook until tender.
6. Add clams and cook until open.
7. Season to taste and garnish.
Notes
Simmer gently to avoid curdling.
Discard any unopened clams.
