Delicious Tiramisu Cinnamon Rolls infused with rich coffee flavors and topped with creamy mascarpone frosting.

- 240g (2 cups) all-purpose flour
- 100g (1/2 cup) light brown sugar
- 90g (1/3 cup + 1 tablespoon) whole milk
- 56g (4 tablespoons) unsalted butter
- 1 egg
- 1 tablespoon coffee grounds
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 1/2 teaspoons active dry yeast
- 226g (1 cup) mascarpone cheese
- 42g (3 tablespoons) unsalted butter for the filling
- 2 tablespoons granulated sugar for the filling
- 2 tablespoons heavy cream or whole milk for the filling
- 2 teaspoons vanilla bean paste for topping
- Cocoa powder for dusting
Instructions
- Start by infusing the milk with coffee grounds. Combine the milk and coffee in a small bowl, cover it, and refrigerate for about 2-3 hours.
- Next, create the tangzhong by heating a mixture of some of the flour and milk in a microwave-safe bowl for about 30 seconds until it thickens.
- Warm the coffee-infused milk until it reaches about 100°F.
- In a large mixing bowl, combine all the dough ingredients. Mix until a dough forms, then knead until smooth and elastic, about 5-10 minutes.
- Place the kneaded dough in a greased bowl, cover it, and let it rise until it doubles in size, about 60-75 minutes.
- While waiting, prepare the filling by mixing softened butter, sugar, coffee grounds, and cinnamon until smooth.
- Once the dough has risen, punch it down and roll it out into a rectangle. Spread the filling evenly across the surface.
- Roll the dough tightly into a log, then slice it into segments about 1 to 1.5 inches wide.
- Place the segments in a greased baking dish with space between them. Cover and let rise for another 30 minutes.
- Preheat your oven to 350°F. Bake the rolls for about 18-22 minutes, or until golden brown.
- While the rolls are baking, whip together the frosting ingredients: mascarpone, heavy cream, and vanilla bean paste. Spread this frosting on top of the warm rolls.
- Finish with a dusting of cocoa powder before serving.
Notes
These rolls are best enjoyed fresh but can be stored in an airtight container for up to three days or frozen for 2-3 months.
