Ingredients

  • 2 slices Whole Grain Bread (80g)
  • 2 Eggs (120g)
  • 60g Avocado
  • Salt to taste
  • Pepper to taste
  • Splash of Lemon Juice
  • Chili Flakes (optional) to taste

Instructions

  1. Start by toasting the slices of whole grain bread until they become golden brown, about 2-3 minutes per side.
  2. While the bread toasts, boil the eggs for 6-7 minutes, then transfer them to an ice bath.
  3. Cut open the avocado, scoop out the flesh, and mash it with salt, pepper, and lemon juice.
  4. Once the eggs have cooled, slice them neatly and set aside.
  5. Spread the creamy mashed avocado over the toasted bread, then place the sliced eggs on top.
  6. If desired, sprinkle with chili flakes and enjoy your toast warm!
