- 2 Eggs (120g)
- 60g Avocado
- Salt to taste
- Pepper to taste
- Splash of Lemon Juice
- Chili Flakes (optional) to taste
Instructions
- Start by toasting the slices of whole grain bread until they become golden brown, about 2-3 minutes per side.
- While the bread toasts, boil the eggs for 6-7 minutes, then transfer them to an ice bath.
- Cut open the avocado, scoop out the flesh, and mash it with salt, pepper, and lemon juice.
- Once the eggs have cooled, slice them neatly and set aside.
- Spread the creamy mashed avocado over the toasted bread, then place the sliced eggs on top.
- If desired, sprinkle with chili flakes and enjoy your toast warm!
