  • ¼ cup fresh cilantro leaves, roughly chopped
  • ½ cup crumbled cotija cheese
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons fresh lime juice (from about 2 limes)
  • 1 teaspoon honey
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Start by charring the corn. Heat a skillet over medium-high heat, and add the corn kernels. Cook for about 3-4 minutes until they develop some lovely char marks. Set it aside to cool.
  2. In a separate bowl, whisk together the olive oil, lime juice, honey, cumin, chili powder, salt, and black pepper. Let this dressing sit for 15 minutes to allow the flavors to meld beautifully.
