- 1 cup ricotta cheese
- 1 lemon (juice and zest)
- 2 cups fresh spinach
- 2 tablespoons olive oil

- Grated parmesan cheese (optional)
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the spinach and cook until wilted, which should take about 2 to 3 minutes.
- In a bowl, mix the ricotta cheese, lemon juice, lemon zest, salt, and pepper. The mixture should be creamy and fragrant!
- Combine the cooked pasta with the spinach and the ricotta mixture, tossing until well coated.
- Serve warm, topped with grated parmesan cheese if desired.
Notes
