Description

A delightful blend of taco flavors and cheesy pasta, perfect for family dinners.


Ingredients

  • 8 oz pasta (elbow macaroni or penne)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn (frozen or canned)
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • 1 cup salsa
  • Salt and pepper, to taste
  • Chopped cilantro or green onions, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and set aside.
  3. While the pasta cooks, heat a skillet over medium-high heat. Add the ground beef or turkey and cook until browned, breaking it up with a spoon.
  4. Once the meat is cooked, drain any excess fat. Stir in the taco seasoning and add a bit of water if needed to combine.
  5. Add the black beans, diced tomatoes, corn, and cooked pasta to the skillet. Stir everything together.
  6. Take half of the cheese and mix it in to melt into the pasta mixture. Pour in the salsa and combine again.
  7. Transfer the mixture to a baking dish and top with the remaining cheese.
  8. Bake for about 15-20 minutes, or until the cheese has melted and becomes bubbly.
  9. Remove from the oven and let it cool slightly before garnishing with cilantro or green onions.
  10. Dish it out and enjoy your savory Taco Pasta Bake!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for 2-3 months.
