- 8 oz pasta (elbow macaroni or penne)
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn (frozen or canned)
- 2 cups shredded cheese (cheddar or a Mexican blend)
- 1 cup salsa
- Salt and pepper, to taste
- Chopped cilantro or green onions, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and set aside.
- While the pasta cooks, heat a skillet over medium-high heat. Add the ground beef or turkey and cook until browned, breaking it up with a spoon.
- Once the meat is cooked, drain any excess fat. Stir in the taco seasoning and add a bit of water if needed to combine.
- Add the black beans, diced tomatoes, corn, and cooked pasta to the skillet. Stir everything together.
- Take half of the cheese and mix it in to melt into the pasta mixture. Pour in the salsa and combine again.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake for about 15-20 minutes, or until the cheese has melted and becomes bubbly.
- Remove from the oven and let it cool slightly before garnishing with cilantro or green onions.
- Dish it out and enjoy your savory Taco Pasta Bake!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for 2-3 months.
