Ingredients
Scale
- 1 lb lean ground beef
- 1 egg, beaten
- ¼ cup onion, finely chopped
- 2 garlic cloves, minced
- ½ cup Panko breadcrumbs
- ¼ tsp nutmeg
- 2 tbsp fresh parsley, finely chopped and divided
- ½ tsp salt
- Freshly ground pepper to taste
- 1 tbsp olive oil
- ¾ cup beef broth
- 1 (10.5 oz) can condensed cream of chicken soup
- 3 tbsp sour cream
- Freshly cooked egg noodles
Instructions
- Mix the ground beef, beaten egg, chopped onion, minced garlic, Panko breadcrumbs, nutmeg, salt, pepper, and one tablespoon of chopped parsley until everything is well combined.
- Divide the mixture into roughly 20 meatballs.
- Heat the olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides—about 5 minutes.
- Add the beef broth, condensed cream of chicken soup, sour cream, and remaining tablespoon of parsley to the skillet. Bring it to a boil.
- Return the meatballs to the skillet and let everything simmer for an additional 5-7 minutes, or until cooked through.
- Serve the Swedish meatballs over freshly cooked egg noodles.
Notes
For variation, consider adding grated carrots or using ground turkey instead of beef.
