Ingredients

  • 1 cup milk
  • 1 egg
  • 2 tablespoons butter (melted)
  • 1 teaspoon vanilla extract

Instructions

  1. Mix the dry ingredients: In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk until well combined.
  2. Mix the wet ingredients: In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract until blended.
  3. Pour the wet mixture into the dry ingredients and stir gently until no dry spots remain. A few lumps are okay!
  4. Preheat your skillet or griddle over medium heat. A drop of water should dance on the surface when it’s ready.
  5. Grease the skillet lightly with melted butter or non-stick spray. Pour about 1/4 cup of batter for each pancake.
  6. Cook until bubbles form and edges look set, around 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
  7. Remove from skillet and keep warm while repeating with remaining batter.
  8. Serve pancakes warm with your favorite toppings!

Notes

For fluffy pancakes, avoid overmixing the batter. Customize with add-ins like berries or chocolate chips for extra flavor.
