Ingredients

  • 2 pounds potatoes
  • 1 cup mayonnaise
  • 1/2 cup chopped onions
  • 2 tablespoons fresh dill
  • 1 tablespoon mustard
  • 4 hard-boiled eggs, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until they become tender, about 15-20 minutes. Drain and let cool.
  2. Chop the cooled potatoes into bite-sized pieces and place them in a large mixing bowl.
  3. Mix together the mayonnaise, chopped onions, fresh dill, mustard, and chopped hard-boiled eggs in another bowl.
  4. Fold the potato chunks into the mayonnaise mixture gently, ensuring the potatoes remain intact.
  5. Season with salt and pepper to taste, adjusting as needed.
  6. Chill the salad in the refrigerator for at least 1 hour before serving.
