- 2 ripe bananas, mashed
- 1 1/2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 cup milk (any kind)
- 1 teaspoon vanilla extract
- Optional: chocolate chips, nuts, or dried fruit
Instructions
- Preheat your oven to 375°F (190°C).
- Mash the bananas in a bowl until smooth. You can use a fork or a potato masher—make it easy on yourself!
- Add the oats, baking powder, baking soda, salt, and cinnamon to the bowl. Mix everything together until well combined.
- Pour in the milk and vanilla extract, and stir until you’ve got a nice batter.
- If you want to add extra deliciousness, fold in any optional ingredients, like chocolate chips or chopped nuts.
- Fill muffin cups with your batter. I like to use a scoop for even portions.
- Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool before serving. This part is hard because they smell so good, but trust me, you’ll want to wait just a bit!
