Description

Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup milk (any kind)
  • 1 teaspoon vanilla extract
  • Optional: chocolate chips, nuts, or dried fruit

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mash the bananas in a bowl until smooth. You can use a fork or a potato masher—make it easy on yourself!
  3. Add the oats, baking powder, baking soda, salt, and cinnamon to the bowl. Mix everything together until well combined.
  4. Pour in the milk and vanilla extract, and stir until you’ve got a nice batter.
  5. If you want to add extra deliciousness, fold in any optional ingredients, like chocolate chips or chopped nuts.
  6. Fill muffin cups with your batter. I like to use a scoop for even portions.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  8. Let the muffins cool before serving. This part is hard because they smell so good, but trust me, you’ll want to wait just a bit!
