  • 1/2 cup (120ml) Good Quality Extra Virgin Olive Oil
  • 46 cloves Garlic, minced
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup (120ml) Vegetable or Chicken Broth
  • Fresh Parsley or Oregano, for garnish (optional)

Instructions

  1. Wash and prep potatoes: Start by washing and scrubbing your potatoes. If you prefer, peel them, then cut them into consistent 1-1.5 inch wedges or 1-inch chunks.
  2. Soak for crispy texture: Soak the cut potatoes in cold water for 30-60 minutes. Once soaked, drain and pat them dry.
  3. Preheat the oven: Preheat your oven to 400°F (200°C), with the oven rack positioned in the middle.
  4. Create the marinade: In a large bowl, whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
  5. Coat the potatoes: Add the thoroughly dried potato pieces and toss them in the marinade.
  6. Spread on baking sheet: Spread the marinated potatoes in a single layer on a baking sheet.
  7. Roast initially: Roast for 20-25 minutes without disturbing them.
  8. Flip and add broth: Flip the potato pieces and pour the broth around them, then return to the oven.
  9. Continue roasting: Roast for another 25-35 minutes, flipping every 10-15 minutes.
  10. Finalize cooking: Roast until fork-tender and golden brown, about 50-60 minutes total.
  11. Let them rest: Allow to rest for 5-10 minutes and garnish with fresh parsley or oregano.
