Description

Ingredients

  • 200g feta cheese
  • 4 large eggs
  • 2 tomatoes, chopped
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the chopped tomatoes and diced bell pepper in a baking dish.
  3. Crumble the feta cheese over the top of the vegetables.
  4. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
  5. Make small wells in the mixture and gently crack an egg into each well.
  6. Bake in the preheated oven for about 20-25 minutes, until the eggs are set to your liking.
  7. Garnish with fresh herbs before serving.
