- 200g feta cheese
- 4 large eggs
- 2 tomatoes, chopped
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh herbs (like parsley or basil) for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the chopped tomatoes and diced bell pepper in a baking dish.
- Crumble the feta cheese over the top of the vegetables.
- Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
- Make small wells in the mixture and gently crack an egg into each well.
- Bake in the preheated oven for about 20-25 minutes, until the eggs are set to your liking.
- Garnish with fresh herbs before serving.
