Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 cups cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Olive oil
  • Cooked rice, pasta, or roasted veggies for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat a good splash of olive oil over medium-high heat in a large oven-safe skillet.
  4. Add the seasoned chicken breasts and sear for about 5 minutes on each side until golden-brown.
  5. Pour the balsamic vinegar over the chicken and let it come to a gentle simmer.
  6. Sprinkle the halved cherry tomatoes and mozzarella cheese on top of the chicken.
  7. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through and cheese is melted.
  8. Remove from the oven and sprinkle with fresh basil before serving.
