- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 2 cups cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
- Olive oil
- Cooked rice, pasta, or roasted veggies for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- Heat a good splash of olive oil over medium-high heat in a large oven-safe skillet.
- Add the seasoned chicken breasts and sear for about 5 minutes on each side until golden-brown.
- Pour the balsamic vinegar over the chicken and let it come to a gentle simmer.
- Sprinkle the halved cherry tomatoes and mozzarella cheese on top of the chicken.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through and cheese is melted.
- Remove from the oven and sprinkle with fresh basil before serving.
Notes
