Instructions

  1. Marinate the Chicken: Start by cutting the chicken into bite-sized pieces. Place the chicken in a bowl and season with salt, pepper, and olive oil. Let it marinate for about 10-15 minutes while you prepare the sauce.
  2. Make the Sauce: In a separate bowl, mix together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and minced garlic. Adjust the spice levels according to your preference.
  3. Cook the Chicken: In a skillet over medium heat, add a little more olive oil if needed. Cook the marinated chicken for about 6-8 minutes, stirring occasionally until golden brown and fully cooked.
  4. Add the Sauce: Once the chicken is cooked, lower the heat and pour the sauce over the chicken. Stir well to coat each piece evenly. Allow everything to cook together for 2-3 minutes, letting the sauce thicken slightly.
