Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped fresh parsley leaves
  • 1 clove garlic (grated)
  • Kosher salt and freshly ground black pepper (to taste)
  • 4 cups ciabatta bread cubes
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 clove garlic (grated)
  • Kosher salt and freshly ground black pepper (to taste)
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1/4 cup mayonnaise
  • 1/4 cup buttermilk
  • 3 tablespoons freshly grated Parmesan
  • 1 clove garlic (grated)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 heads romaine (roughly chopped)
  • 1/4 cup freshly grated Parmesan

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss the ciabatta bread cubes with 3 tablespoons of olive oil, 2 tablespoons of parsley, grated garlic, salt, and black pepper in a mixing bowl.
  3. Spread the bread cubes evenly on a baking sheet in a single layer.
  4. Bake for about 12–15 minutes or until they turn golden brown and crispy.
  5. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  6. Season the chicken breasts with salt and pepper. Add them to the skillet and cook for about 6-8 minutes on each side or until they reach an internal temperature of 165°F (75°C).
  7. Remove the chicken from the skillet and let it rest for a few minutes, then slice it into bite-sized pieces.
  8. In a mixing bowl, combine the mayonnaise, buttermilk, lemon juice, lemon zest, grated garlic, Dijon mustard, Worcestershire sauce, and a pinch of salt and pepper.
  9. Whisk until the dressing is smooth and creamy. Adjust the seasoning to your taste.
  10. In a large bowl, combine the chopped romaine and the sliced chicken.
  11. Drizzle the dressing over the salad and toss everything together gently until the romaine is evenly coated.
  12. Top with homemade croutons and sprinkle some freshly grated Parmesan on top.

Notes

Serve the salad immediately after tossing for the freshest taste and crunch. Keep croutons separate if storing leftovers to prevent sogginess.
