Description

A quick and comforting Tomato Basil Pasta recipe that’s perfect for busy weeknights.


Ingredients

Scale
  • 12 ounces of pasta (spaghetti, penne, or your favorite shape)
  • 3 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 can (14.5 ounces) of diced tomatoes (or use fresh tomatoes, chopped)
  • Salt and pepper to taste
  • 1/4 teaspoon of red pepper flakes (optional)
  • 1 cup of fresh basil leaves, packed
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the pasta according to the package instructions in a large pot of salted boiling water.
  2. Prepare the sauce by heating olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the diced tomatoes (with their juices), season with salt, pepper, and red pepper flakes, then let simmer for about 5-7 minutes.
  4. Combine the pasta with the sauce, adding reserved pasta water if needed to reach the desired consistency.
  5. Finish by folding in fresh basil leaves until they wilt.
  6. Serve and enjoy with grated Parmesan cheese on top.

Notes

Pairs well with a crisp salad and garlic bread. Store leftovers in an airtight container for up to 3 days.
