Ingredients

  • 1/4 cup lime juice (about 1 lime)
  • 1/4 cup olive oil + 1 Tbsp.
  • 1 shallot (about 3 Tbsp. minced)
  • 1 Tbsp. honey
  • 1/2 tsp. sea salt
  • 1/8 tsp. black pepper
  • 1 cup uncooked quinoa
  • 2 cups vegetable broth (optional, can use water)
  • 2 15–oz. cans black beans
  • 1/2 cup sliced green onion
  • 1 cup chopped cilantro
  • 1 cup crumbled cotija cheese

Instructions

  1. Cook the quinoa: Start by adding 1 cup of quinoa and 2 cups of vegetable broth (or water if you prefer) to a saucepan. Cook according to the package instructions until the quinoa is fluffy. Once it’s done, remove it from heat and let it sit for 5 minutes to absorb any remaining liquid.
  2. Make the vinaigrette: While the quinoa is cooking, grab a large bowl and mix together the lime juice, olive oil, minced shallot, honey, sea salt, and black pepper. Whisk everything together until it emulsifies into a beautiful dressing.
  3. Prep other ingredients: Drain and rinse the black beans under cold water to remove the excess sodium. Chop your fresh cilantro and crumble the cotija cheese for that added creamy texture. Slice the green onion finely.
  4. Combine and toss: After letting the quinoa cool slightly, fluff it with a fork and add it to the large bowl with the vinaigrette. Toss in the black beans, chopped cilantro, and crumbled cotija cheese. Gently mix everything together until well incorporated.
  5. Chill before serving: For the best flavor, cover the bowl with plastic wrap and chill the salad in the refrigerator for at least an hour before serving.

Notes

Serve chilled for the best flavor. This salad can be made ahead of time and stored in the fridge for up to 4 days.
