Ingredients

  • 2 cups mixed salad greens
  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the mixed salad greens thoroughly under cold water. Pat them dry or use a salad spinner.
  2. Rinse the fresh blueberries gently under cold water, then drain them.
  3. Chop the shelled pistachios into smaller pieces and sprinkle them over the salad greens.
  4. Crumble the feta cheese into small pieces and distribute it evenly on top of the salad.
  5. Peel and slice the red onion into thin rings and add them to the salad.
  6. Combine the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper in a small bowl and whisk until emulsified.
  7. Drizzle the dressing over the salad and gently toss to coat.
  8. Taste the salad and adjust the seasoning if necessary.
  9. Serve immediately, or refrigerate briefly for a chilled dish.
