- 2 cups mixed salad greens
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios
- 1/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash the mixed salad greens thoroughly under cold water. Pat them dry or use a salad spinner.
- Rinse the fresh blueberries gently under cold water, then drain them.
- Chop the shelled pistachios into smaller pieces and sprinkle them over the salad greens.
- Crumble the feta cheese into small pieces and distribute it evenly on top of the salad.
- Peel and slice the red onion into thin rings and add them to the salad.
- Combine the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper in a small bowl and whisk until emulsified.
- Drizzle the dressing over the salad and gently toss to coat.
- Taste the salad and adjust the seasoning if necessary.
- Serve immediately, or refrigerate briefly for a chilled dish.
Notes
For a vibrant presentation, garnish with additional blueberries or toasted pistachios. Store leftovers in an airtight container for up to 2-3 days, keeping the dressing separate until serving.
