- 2 pieces skinless chicken breasts (pounded thin)
- 1 clove garlic (grated)
- 55 g Panko or breadcrumbs
- Salt & pepper (to taste)
- Cooking oil (for frying)
- 200 g Skyr or Greek yoghurt (creamy base)
- 1/2 clove garlic
- 1 tsp Worcestershire sauce
- 2 tsp lemon juice
- 1 Tbsp mayonnaise
- 25 g Parmesan cheese (grated)
- 2 heads baby gem lettuce (fresh and crisp)
- Chopped chives (for serving, optional)
- 10 g Parmesan cheese (for serving)
Instructions
- Prepare the Chicken: Start by pounding the chicken breasts to create thin, even pieces.
- Make the Breading: In a bowl, mix the Panko or breadcrumbs with a pinch of salt and pepper.
- Coat the Chicken: Dip each piece of chicken into the garlic mixture, press it into the breadcrumb mixture.
- Heat the Oil: In a frying pan, heat a generous amount of cooking oil over medium heat.
- Fry the Chicken: Carefully place the breaded chicken pieces into the hot oil.
- Prepare the Dressing: Mix together the Skyr or Greek yoghurt, grated garlic, Worcestershire sauce, lemon juice, mayonnaise, and grated Parmesan cheese.
- Assemble the Salad: Chop the baby gem lettuce and toss in the creamy yoghurt dressing.
- Slice the Schnitzel: Once the chicken is cooked, slice it into strips and arrange on top of the salad.
- Serve: Garnish with additional grated Parmesan and chopped chives, if using.
