Ingredients

  • 2 pieces skinless chicken breasts (pounded thin)
  • 1 clove garlic (grated)
  • 55 g Panko or breadcrumbs
  • Salt & pepper (to taste)
  • Cooking oil (for frying)
  • 200 g Skyr or Greek yoghurt (creamy base)
  • 1/2 clove garlic
  • 1 tsp Worcestershire sauce
  • 2 tsp lemon juice
  • 1 Tbsp mayonnaise
  • 25 g Parmesan cheese (grated)
  • 2 heads baby gem lettuce (fresh and crisp)
  • Chopped chives (for serving, optional)
  • 10 g Parmesan cheese (for serving)

Instructions

  1. Prepare the Chicken: Start by pounding the chicken breasts to create thin, even pieces.
  2. Make the Breading: In a bowl, mix the Panko or breadcrumbs with a pinch of salt and pepper.
  3. Coat the Chicken: Dip each piece of chicken into the garlic mixture, press it into the breadcrumb mixture.
  4. Heat the Oil: In a frying pan, heat a generous amount of cooking oil over medium heat.
  5. Fry the Chicken: Carefully place the breaded chicken pieces into the hot oil.
  6. Prepare the Dressing: Mix together the Skyr or Greek yoghurt, grated garlic, Worcestershire sauce, lemon juice, mayonnaise, and grated Parmesan cheese.
  7. Assemble the Salad: Chop the baby gem lettuce and toss in the creamy yoghurt dressing.
  8. Slice the Schnitzel: Once the chicken is cooked, slice it into strips and arrange on top of the salad.
  9. Serve: Garnish with additional grated Parmesan and chopped chives, if using.
