Description
A delicious Chicken Caesar Salad that combines savory chicken, creamy dressing, and crunchy croutons for a delightful meal.
Ingredients
Scale
- 3 cups day-old bread, cubed
- 2 tablespoons olive oil (for croutons)
- 1 garlic clove, minced (for croutons)
- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil (for chicken)
- 1/4 teaspoon garlic powder
- Salt and black pepper, to taste
- 6 cups chopped romaine lettuce
- 1/3 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced (for dressing)
- 1 teaspoon anchovy paste (optional)
- 2 tablespoons finely grated Parmesan cheese
- Shaved Parmesan, for garnish
- Extra lemon wedges, optional
Instructions
- Make the croutons: Start by cutting the bread into 1-inch cubes. Toss them with 2 tablespoons of olive oil, 1 minced garlic clove, and a pinch of salt. Spread the bread cubes on a baking sheet and bake at 375°F for 10–12 minutes until they turn a lovely golden brown. Let them cool before using.
- Cook the chicken: Season the chicken breasts with salt, pepper, and garlic powder. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken for 5–6 minutes per side until the internal temperature reaches 165°F. Once cooked, let the chicken rest for about 5 minutes before slicing it thinly.
- Prepare the dressing: In a mixing bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, the second minced garlic clove, the anchovy paste (if you’re using it), finely grated Parmesan, and a pinch of salt and pepper until the mixture is smooth and creamy.
- Combine the salad: In a large mixing bowl, add the chopped romaine lettuce, sliced chicken, cooled croutons, and the creamy dressing you’ve just made. Toss everything well to ensure the ingredients are evenly coated.
- Serve: Top your salad with shaved Parmesan for a touch of elegance and serve immediately with some lemon wedges on the side for a fresh squeeze of flavor.
Notes
If you have leftovers, store in the refrigerator for up to 2 days. Keep croutons separate to maintain crunch.
