Description
A delicious and budget-friendly meal that combines tender chicken with creamy coconut milk and aromatic spices, perfect for family gatherings or quick weeknight dinners.
Ingredients
Scale
- 1 pound chicken breast, cubed
- 1 can (14 oz) coconut milk
- 1 tablespoon curry powder
- 1 teaspoon garlic powder
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 2 cups white or jasmine rice
- Fresh herbs (cilantro or basil) for garnish
- 1 lime, cut into wedges
- Crunchy vegetables (like bell peppers and carrots) for topping
Instructions
- Heat some oil in a large skillet over medium heat. Add the cubed chicken and cook until browned.
- Add the coconut milk, curry powder, garlic powder, ginger, salt, and pepper. Allow it to simmer for about 10-15 minutes until the chicken is fully cooked and the sauce thickens.
- Cook the rice according to package instructions. This usually takes around 15 minutes, so it times nicely with the chicken.
- Serve by scooping the cooked rice into bowls, then topping with the coconut chicken mixture. Finish off with fresh herbs, lime wedges, and crunchy vegetables for a burst of color and flavor.
Notes
Consider pairing this dish with a refreshing green salad or crispy wonton chips for added texture. You can also garnish with sesame seeds or crushed peanuts for flair.
