- 4 chicken breasts
- 1 cup heavy cream
- 2 tablespoons fresh herbs (such as parsley, thyme, or rosemary)
- Salt and pepper to taste
- 2 pounds potatoes
- 4 tablespoons butter
- 1/2 cup milk
- 4 large carrots
- 2 tablespoons honey
- 1 tablespoon butter for glazing
- Parsley for garnish
Instructions
- Heat a skillet over medium heat. Add a bit of oil if you like, then cook the chicken breasts until they’re golden brown on both sides and cooked through. Remove the chicken from the pan and set it aside on a plate.
- Add the heavy cream and herbs to the same skillet. Stir those together, allowing the flavors to meld. Season the sauce with salt and pepper, then return the chicken to the pan to coat it in the creamy sauce.
- Peel and cut the potatoes into chunks. Toss them into a pot of salted boiling water. Cook until they’re tender, about 15-20 minutes. Drain the potatoes and then mash them with butter and milk until smooth and creamy. Season with salt to taste.
- Slice the carrots into thin rounds. In a separate pan, melt some butter and add the carrots. Sauté them with honey until they’re tender and shiny.
- Dish out your chicken onto plates and spoon a generous ladle of the creamy herb sauce on top. Add a side of mashed potatoes and glazed carrots, garnishing everything with parsley.
Notes
For extra flavor in the mashed potatoes, consider adding garlic or cheese. You can also substitute chicken with turkey or portobello mushrooms for a vegetarian option.
