  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Prepare the corn: If you’re using fresh corn, cook the kernels until they’re tender-crisp and then drain them well. For frozen corn, simply thaw completely and drain any excess water.
  2. Make the dressing: In a large bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and black pepper until smooth.
  3. Combine ingredients: Now, add the cooked corn, crumbled cotija cheese, chopped red onion, and chopped cilantro to the dressing.
  4. Fold it together: Gently fold all the ingredients together until the corn is evenly coated with the dressing.
  5. Taste and adjust: Give the salad a taste and adjust the salt or lime juice as needed.
  6. Chill: Cover the salad and chill it in the refrigerator for at least 30 minutes before serving.

Notes

For added flavor, garnish with more cotija cheese, chili powder, or lime wedges before serving.
