- 2 boneless, skinless chicken breasts
- 8 ounces pasta of your choice
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach or kale
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Start by cooking the pasta according to the package instructions. Once it’s al dente, drain it and set it aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until it’s fragrant, which usually takes about a minute.
- Now, add the chicken breasts to the skillet and season them with salt and pepper. Cook the chicken until it’s golden brown and no longer pink in the center, about 6-7 minutes per side. Once cooked, remove the chicken from the skillet and slice it into strips.
- In the same skillet, add the ricotta and Parmesan cheese. Stir to combine and let the cheeses melt together. Then, add the cooked pasta and spinach or kale. Toss everything together until the spinach wilts and everything is coated in that creamy goodness.
- Top it off with the sliced chicken, sprinkle with red pepper flakes if you like a bit of spice, and serve immediately.
Notes
For serving, pair with garlic bread and a fresh salad. Store leftovers in an airtight container in the fridge for up to 3 days.
