A comforting and elegant dish featuring tender chicken and cheese-filled tortellini in a rich, creamy garlic sauce with sun-dried tomatoes and fresh spinach.


Ingredients

  • 1 lb boneless skinless chicken breast
  • 8 oz cheese tortellini
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken breast with salt, black pepper, and Italian seasoning on both sides.
  2. Heat the olive oil and butter in a large skillet over medium heat until melted and hot.
  3. Add the seasoned chicken to the skillet and cook for about 5 to 7 minutes per side until golden brown and cooked through.
  4. Remove the chicken from the skillet and slice it into strips.
  5. Add the minced garlic to the skillet and cook for about 1 minute until fragrant.
  6. Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
  7. Pour in the chicken broth to deglaze the pan, scraping up any browned bits.
  8. Add the heavy cream and bring the mixture to a gentle simmer.
  9. Stir in the grated Parmesan cheese until melted and the sauce thickens.
  10. Fold in the baby spinach and red pepper flakes, cooking until the spinach wilts.
  11. Return the sliced chicken to the skillet and add the cheese tortellini.
  12. Simmer for 3 to 5 minutes until the tortellini is tender and heated through.
  13. Garnish with the chopped fresh parsley and serve immediately.

Notes

For a lighter option, substitute half-and-half for heavy cream. Adjust the consistency of the sauce according to your preference.
