- 4 small to medium chicken breasts (or 2 large halved)
- Salt and pepper
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup grated parmesan cheese
- Optional: 1 cup chopped spinach
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add the chicken and cook for about 5-6 minutes on each side, or until crispy and golden brown.
- Set the chicken aside on a plate.
- Reduce the heat and toss in minced garlic; sauté for about 30 seconds.
- Stir in the cream, Italian seasoning, and parmesan cheese until smooth.
- If using spinach, add it now and let it simmer until wilted.
- Return the crispy chicken to the skillet and spoon the garlic sauce over it.
- Let it simmer for another minute.
Notes
Serve with roasted vegetables, a fresh garden salad, or garlic bread. Leftovers can be stored in the fridge for 3-4 days.
