- 4 boneless, skinless chicken breasts
- 1 cup of uncooked long-grain white rice
- 3 cups of chicken broth
- 1 can of cream of chicken soup
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper, to taste
- 1 cup of frozen peas and carrots (optional)
- Fresh parsley for garnish (optional)
Instructions
- Prep the chicken: Start by rinsing the chicken breasts under cold water. Pat them dry and then season them with salt, pepper, garlic powder, and onion powder.
- Layer your ingredients: In your crockpot, add the chicken breasts first to ensure they stay moist during the cooking process.
- Add the rice: Sprinkle the uncooked rice evenly over the chicken.
- Mix the sauce: In a separate bowl, combine the chicken broth and cream of chicken soup. Whisk until smooth, then pour this mixture over the chicken and rice.
- Add veggies: If you choose to include frozen peas and carrots, sprinkle them on top.
- Cook low and slow: Cover your crockpot and set it to low. Let it cook for about 300-360 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the rice has absorbed the liquid.
- Serve and enjoy: Once cooking time is up, shred the chicken right in the pot with two forks for easy serving. Mix everything together and serve it hot, garnished with fresh parsley if desired.
Notes
Serve with a fresh garden salad or steamed broccoli for a complete meal. For an extra touch, add grated Parmesan cheese before serving.
