- 2 lbs boneless chicken thighs or breasts
- 1 can (15 oz) of diced tomatoes (with juices)
- 1 cup chicken broth
- 1 cup diced onions

- 1 tablespoon garlic, minced
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Start by rinsing the chicken thighs or breasts under cold water. Pat them dry with paper towels.
- In the bottom of the crockpot, layer the diced tomatoes and their juices.
- Pour in the chicken broth, adding a touch of depth to the flavor.
- Toss in the diced onions and mixed vegetables. These will add sweetness and texture to the dish.
- Add garlic, Italian seasoning, salt, and pepper. Mix everything gently to ensure that the chicken gets coated in those tasty seasonings.
- Place the chicken on top of the vegetables and seasonings. Don’t worry about submerging it; the chicken will cook down and absorb the flavors.
- Cover the crockpot and set it on low for 6-8 hours or high for 4 hours.
- Once cooked, shred the chicken with two forks right in the crockpot and give everything a good stir.
- Serve it warm, topped with chopped parsley for a fresh touch.
Notes
For an extra layer of flavor, consider searing your chicken before adding it to the crockpot. Adjust seasonings to taste.
