Instructions

  1. Start by rinsing the chicken thighs or breasts under cold water. Pat them dry with paper towels.
  2. In the bottom of the crockpot, layer the diced tomatoes and their juices.
  3. Pour in the chicken broth, adding a touch of depth to the flavor.
  4. Toss in the diced onions and mixed vegetables. These will add sweetness and texture to the dish.
  5. Add garlic, Italian seasoning, salt, and pepper. Mix everything gently to ensure that the chicken gets coated in those tasty seasonings.
  6. Place the chicken on top of the vegetables and seasonings. Don’t worry about submerging it; the chicken will cook down and absorb the flavors.
