  • 1 cup Cherry Tomatoes (or substitute with any other ripe tomatoes)
  • 1 cup Bell Peppers (any variety can be used)
  • 1/2 medium Red Onion (or shallots as an alternative)
  • 1 tablespoon Fresh Parsley (or basil, oregano, or thyme can be used)

  • 2 tablespoons Olive Oil (other oils can be substituted if needed)
  • optional Hot Sauce or Lemon Juice (for added kick or tanginess)

Instructions

  1. Start by gathering all your ingredients and prepping your vegetables. Chop the bell peppers, half an onion, and slice your cherry tomatoes in halves. If you’re using feta, crumble it into small pieces.
  2. Heat a skillet over medium heat and add the olive oil. Once the oil shimmers, toss in the chopped onions and bell peppers. Sauté them for about 3-4 minutes until they start to soften.
  3. Add the halved cherry tomatoes to the skillet, stirring gently. Cook them for another 2-3 minutes. They should start to release their juices and make the kitchen smell incredible!
  4. While your veggies are cooking, crack the eggs into a mixing bowl. Whisk them until the yolks and whites combine, seasoning them with salt and black pepper.
  5. Pour the egg mixture into the skillet over your sautéed vegetables. Allow it to sit for a few seconds to let the eggs set slightly. Then, gently stir with your spatula, folding the eggs into the vegetables.
  6. As the eggs start to cook, add your feta cheese and fresh parsley. Keep stirring until the eggs are mostly set but still creamy. Remove from heat; you don’t want them to overcook!
  7. If you like a little extra kick, drizzle some hot sauce or lemon juice over the top before serving.
