Description

A simple and delicious recipe for bright and tangy lemon bars with a buttery crust.


Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.75 cup unsalted butter (cold and cut into pieces)
  • 1 cup granulated sugar
  • 3 large eggs
  • 0.25 cup fresh lemon juice (about 2 lemons)
  • 2 teaspoons lemon zest
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by combining the all-purpose flour and powdered sugar in a mixing bowl.
  3. Cut the cold butter into the dry ingredients until crumbly.
  4. Press the mixture into the bottom of a greased 9×13-inch baking dish.
  5. Bake the crust in the preheated oven for about 15 minutes or until lightly golden.
  6. Prepare the filling while the crust bakes by whisking together the granulated sugar, eggs, fresh lemon juice, lemon zest, baking powder, and salt until smooth.
  7. Pour the lemon filling over the crust once it’s out of the oven.
  8. Bake for another 20 minutes until the filling is set and slightly wiggles in the center.
  9. Cool the bars on a wire rack before cutting them into squares.
  10. Sprinkle a little powdered sugar on top for garnish if desired.

Notes

Use fresh lemons for the best flavor. Chill the bars for perfect texture before cutting.
