Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Start by placing the chicken thighs in your crockpot. You don’t need to chop them; the slow cooking process will break them down beautifully.
  2. In a bowl, mix the orange juice, soy sauce, honey, minced garlic, and minced ginger. Whisk this mixture until smooth.
  3. Pour the sauce over the chicken in the crockpot, ensuring every piece is well-coated.
  4. Cover the crockpot and set it to cook on low for 240-360 minutes or high for 120-180 minutes, depending on your time availability.
  5. About 30 minutes before serving, mix the cornstarch with water in a small bowl until smooth. Stir this mixture into the crockpot to thicken the sauce.
  6. Once cooked, shred the chicken with two forks and mix it well with the sauce.
  7. Serve the orange chicken hot, garnished with sesame seeds and sliced green onions for an extra pop of color!

Notes

Serve with steamed rice or quinoa for a balanced meal. This dish also freezes well for up to 3 months.
