Description
A zesty and flavorful chicken dish marinated with fresh lime juice, served with a vibrant avocado salsa.
Ingredients
Scale
- 4 pieces boneless, skinless chicken breasts
- 1/4 cup lime juice (freshly squeezed)
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 medium ripe avocados (diced)
- 1 cup cherry tomatoes (halved)
- 1/4 cup red onion (finely chopped)
- 1/4 cup cilantro (chopped)
- 1 lime (juiced)
- 1/2 teaspoon salt
Instructions
- Marinate the Chicken: In a large mixing bowl, combine the lime juice, olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken breasts to the bowl, ensuring they are well coated. Cover and let marinate in the fridge for at least 15 minutes.
- Prepare the Avocado Salsa: Chop the avocados, halve the cherry tomatoes, and finely chop the red onion and cilantro. In a medium bowl, mix the avocados, tomatoes, red onion, and cilantro. Add lime juice and a pinch of salt, then stir gently.
- Grill the Chicken: Preheat the grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C). Remove and let rest for 5 minutes before slicing.
- Serve: Slice the grilled chicken, serve warm topped with the avocado salsa, and add lime wedges on the side.
Notes
Letting the chicken marinate enhances flavor. Use freshly squeezed lime juice for the best taste.
