- 4 large eggs

Instructions
- In a mixing bowl, combine the cottage cheese, eggs, almond flour, vanilla extract, baking powder, and salt.
- Blend the mixture until smooth. This creates a batter that’s perfectly fluffy and rich.
- Heat a non-stick skillet over medium heat and add butter or oil to the pan. You want it hot enough that the butter melts but doesn’t brown.
- Pour a portion of the batter into the skillet, forming pancakes. You can make them as large or small as you like!
- Cook for 2-3 minutes on each side or until they turn golden brown.
- Serve warm, topped with your choice of toppings.
