Ingredients

  • 1 lb chicken breast, diced
  • 1 cup cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil over medium heat in a pan and add the diced chicken. Season with salt, pepper, and oregano. Cook until browned and cooked through.
  2. Combine the cooked rice, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese in a large bowl.
  3. Add the cooked chicken to the bowl and toss to mix well.
  4. Drizzle with lemon juice and additional olive oil if desired.
