Ingredients

- 1 lb chicken breast, diced
- 1 cup cooked rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil over medium heat in a pan and add the diced chicken. Season with salt, pepper, and oregano. Cook until browned and cooked through.
- Combine the cooked rice, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese in a large bowl.
- Add the cooked chicken to the bowl and toss to mix well.
- Drizzle with lemon juice and additional olive oil if desired.
- Serve warm or cold, enjoying throughout the week!
Notes
Best served with warm pita bread or a Greek salad. To enhance flavors, allow the bowl to chill in the fridge for at least 30 minutes before serving.
