- 4 boneless skinless chicken breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 2 tablespoons butter
- 1 cup chicken broth
- 2 pounds russet potatoes
- ½ cup heavy cream
- 2 tablespoons brown sugar
- 1 tablespoon balsamic vinegar
Instructions
- Prepare the chicken: Pat the chicken breasts dry with paper towels and season with salt and pepper. Mix garlic, parsley, and thyme and rub over the chicken. Let it rest for 10 minutes.
- Sear the chicken: Heat olive oil in a skillet over medium-high heat. Place the chicken in the skillet and cook for 5-6 minutes. Flip and cook for another 5-6 minutes.
- Baste for flavor: Once cooked through, add butter and baste the chicken with the melted mixture. Transfer to a plate and keep warm.
- Make the sauce: Add brown sugar and balsamic vinegar to the skillet, stirring until dissolved. Add chicken broth and simmer for 5-7 minutes until thickened.
- Prepare the mashed potatoes: Peel and cut potatoes, boil until tender, drain, then mash with butter and heavy cream. Season to taste.
- Plate the dish: Spoon mashed potatoes onto plates, top with chicken and drizzle with sauce. Garnish with herbs if desired. Serve immediately.
Notes
Don’t rush the sear to ensure a golden crust. Use a meat thermometer for safety.
