- Warm pita bread, cut into triangles

Instructions
- Whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper in a large bowl to create a marinade.
- Add the chicken cubes to the marinade and toss gently to coat; let sit for at least 30 minutes.
- Thread the marinated chicken onto the soaked skewers.
- Preheat your grill or grill pan to medium-high heat and grill the skewers for about 8 to 10 minutes, turning occasionally.
- Prepare the feta dip by blending together feta, Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and chopped dill until smooth.
- Arrange the grilled chicken skewers on a serving board with bowls of feta dip, olives, roasted red peppers, cherry tomatoes, cucumbers, and warm pita.
- Garnish with fresh herbs like parsley, mint, or dill and serve immediately.

For a vegetarian option, substitute chicken with firm tofu or vegetables. Ensure the chicken is cooked to 165°F.
