Instructions
- Combine coconut milk, soy sauce, minced garlic, grated ginger, lime juice, brown sugar, salt, and pepper in a bowl. Stir until well blended.
- Cut the chicken breast into bite-sized pieces and marinate in the coconut mixture for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers, leaving space between pieces.
- Grill for 10-15 minutes, turning occasionally, until cooked through and slightly charred.
