Description

Quick and customizable ground turkey rice bowls topped with a creamy bang bang sauce, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey
  • 1 Tbsp sesame oil (or favorite cooking oil)
  • 23 garlic cloves (minced)
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 12 Tbsp sriracha
  • 23 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (more or less to taste)
  • 2 tsp corn starch
  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (more to kick up the spice)
  • 1 tsp rice vinegar
  • 2 tsp honey
  • Rice (cooked, for serving)
  • Shredded carrots (for topping)
  • Sliced cucumbers (for topping)
  • Shelled edamame (for topping)
  • Pickled onions (for topping)
  • Avocado (sliced, for topping)
  • Shredded cabbage (for topping)
  • Sliced green onion (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, add all of the bang bang sauce ingredients: mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey. Whisk everything together until smooth. Taste it! Adjust flavor if necessary, then chill.
  2. Prepare the Ground Turkey Mixture: Heat a skillet over medium-high heat and drizzle in sesame oil. Add ground turkey, breaking it apart as it cooks until browned and has an internal temperature of 165°F.
  3. Mix in the Flavors: Reduce heat to medium-low, pour in garlic, ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Stir and simmer for 2-3 minutes.
  4. Thicken It Up: Sprinkle corn starch over the turkey mixture and stir well to achieve a hearty consistency.
  5. Finish Off: Stir in about 2 tablespoons of the bang bang sauce into the turkey mixture before serving for added flavor.
  6. Assemble Your Rice Bowls: Lay down a base of rice in each bowl, top with turkey mixture, veggies, and drizzle with bang bang sauce. Garnish with green onions and sesame seeds.

Notes

Store leftovers separately. The turkey mixture and veggies will keep in the fridge for up to 3 days.
