- 2 ripe bananas, mashed
- 1 cup Greek yogurt
- 2 eggs
- 1 cup whole wheat flour
- 1/2 cup oats
- 1/2 cup honey or maple syrup
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Optional: nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the mashed bananas, Greek yogurt, eggs, and honey or maple syrup until smooth.
- Combine the whole wheat flour, oats, baking soda, baking powder, and salt in another bowl.
- Add the dry ingredients into the wet mixture, stirring until just combined.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.
Notes
Use very ripe bananas for the best flavor and sweetness. Don’t over-mix the batter to keep muffins tender.
