Description

These Healthy Greek Yogurt Banana Muffins are fluffy, moist, and perfect for breakfast or snacks, made with ripe bananas and creamy yogurt.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup Greek yogurt
  • 2 eggs
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 cup honey or maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the mashed bananas, Greek yogurt, eggs, and honey or maple syrup until smooth.
  3. Combine the whole wheat flour, oats, baking soda, baking powder, and salt in another bowl.
  4. Add the dry ingredients into the wet mixture, stirring until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.

Notes

Use very ripe bananas for the best flavor and sweetness. Don’t over-mix the batter to keep muffins tender.
