Description

A creamy and delicious macaroni salad perfect for summer gatherings and picnics.


Ingredients

  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Optional: hard-boiled eggs, chopped

Instructions

  1. Cook the elbow macaroni according to the package instructions. Once you’ve boiled it to al dente perfection, drain the macaroni and let it cool.
  2. Mix together the mayonnaise, apple cider vinegar, and Dijon mustard until smooth and creamy in a large bowl.
  3. Add the cooled macaroni to the bowl along with the diced celery, bell pepper, red onion, and any optional ingredients, such as chopped hard-boiled eggs, if you’re using them.
  4. Stir everything together until well combined, ensuring each piece of pasta is coated in the creamy dressing.
  5. Season with salt and pepper to taste. Give it one last stir to ensure every bite is flavorful.
  6. Pop the salad in the refrigerator for at least 30 minutes before serving to let the flavors meld.
