A fresh and vibrant bowl featuring marinated chicken, creamy avocado, colorful veggies, and fluffy rice.


Ingredients

  • 2 large chicken breasts (about 400g)
  • 2 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional)
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Whisk together the honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper to make a marinade.
  2. Coat the chicken breasts evenly in the marinade and let soak for 10 to 15 minutes.
  3. Heat a skillet over medium heat and cook the chicken for 5 to 7 minutes on each side until golden brown and cooked through.
  4. Allow the chicken to rest for a couple of minutes, then slice into strips.
  5. Lay down a bed of warm rice in bowls.
  6. Arrange the sliced chicken on top of the rice, and add sliced avocados, halved tomatoes, corn, and red onion.
  7. Sprinkle fresh cilantro over the top, and add Greek yogurt or sour cream if desired.
  8. Serve warm and enjoy!

Notes

Let the chicken marinate for the full 15 minutes for deeper flavor. Use fresh ingredients for best results.
