- 2 large chicken breasts (about 400g)
- 2 tablespoons honey
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups cooked white or brown rice
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/4 cup red onion, sliced
- 3 tablespoons fresh cilantro, chopped
- 1/2 cup Greek yogurt or sour cream (optional)
- 1/2 teaspoon chili flakes (optional)
Instructions
- Whisk together the honey, lime juice, lime zest, minced garlic, soy sauce, olive oil, salt, and pepper to make a marinade.
- Coat the chicken breasts evenly in the marinade and let soak for 10 to 15 minutes.
- Heat a skillet over medium heat and cook the chicken for 5 to 7 minutes on each side until golden brown and cooked through.
- Allow the chicken to rest for a couple of minutes, then slice into strips.
- Lay down a bed of warm rice in bowls.
- Arrange the sliced chicken on top of the rice, and add sliced avocados, halved tomatoes, corn, and red onion.
- Sprinkle fresh cilantro over the top, and add Greek yogurt or sour cream if desired.
- Serve warm and enjoy!
Notes
Let the chicken marinate for the full 15 minutes for deeper flavor. Use fresh ingredients for best results.
