Description

A comforting yet light meal featuring tender chicken, crisp asparagus, and a delightful honey mustard sauce.

Ingredients

Scale
  • 1 lb asparagus (woody ends trimmed off)
  • 1.5 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1.5 lb chicken breasts (cut into 1-inch cubes)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3 green onions (sliced)
  • 1.5 cups Mahatma Jasmine rice (dry)
  • 1/3 cup honey
  • 1.5 tbsp Grey Poupon Dijon mustard
  • 2 oz water
  • 4 garlic cloves (freshly minced)
  • 1/4 tsp red pepper flakes

Instructions

  1. Cook the rice: Begin by cooking the jasmine rice according to the package instructions, which usually takes about 15-20 minutes.
  2. Prepare the asparagus: Preheat your oven to 400°F (200°C) and toss the trimmed asparagus with olive oil, salt, black pepper, and garlic powder on a baking sheet. Roast for 12-15 minutes.
  3. Cook the chicken: In a skillet, heat olive oil over medium heat, season the chicken pieces, and sauté for 5-7 minutes until golden brown.
  4. Mix the sauce: Whisk together honey, Dijon mustard, water, minced garlic, and red pepper flakes in a bowl, then pour over the cooked chicken and simmer for 3-4 minutes.
  5. Combine everything: Add the roasted asparagus to the skillet and stir together gently.
  6. Serve it up: Fluff the rice and place it on plates, topping it with the honey mustard chicken and asparagus, garnished with sliced green onions.
