Description
A one-pan dish featuring juicy chicken breasts with roasted tomatoes, creamy feta, and a sweet and spicy honey sauce.

- 4 boneless, skinless chicken breasts (About 1.5 lbs total)
- 8 oz block feta cheese (packed in brine)
- 1 pint cherry tomatoes
- 1/4 cup honey
- 2 tbsp hot sauce (adjust to taste)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tbsp fresh parsley (chopped, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Sprinkle the chicken breasts with salt, black pepper, and dried oregano. Place them in the skillet and sear for 4-5 minutes on each side until golden brown.
- Combine the honey and hot sauce in a small bowl and whisk until smooth.
- Add the minced garlic to the pan and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes around the chicken and crumble the feta cheese over them.
- Drizzle the honey-hot sauce mix over everything.
- Transfer the skillet to the oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven and sprinkle with red pepper flakes and fresh parsley before serving.
Notes
Serve Hot Honey Feta Chicken over rice or polenta to soak up the sauce, or alongside a light salad.
