Description

A fresh, colorful salad combining chickpeas, veggies, feta, and a zesty dressing, perfect for summer gatherings.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss everything to combine.
  4. Serve the salad chilled or at room temperature.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container for up to 3 days. For longer storage, the salad can be frozen for a month.
