Ingredients

- 1 cup quinoa
- 2 cups vegetable broth or water
- 1 can chickpeas, drained and rinsed
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Optional: cherry tomatoes, cucumber, or avocado for garnish
Instructions
- Rinse the quinoa under cold water.
- Combine the rinsed quinoa and vegetable broth or water in a saucepan.
- Bring to a boil, then reduce heat, cover, and let simmer for about 15 minutes.
- Add the cooked quinoa to a large mixing bowl, along with chickpeas, lemon juice, lemon zest, olive oil, minced garlic, and chopped parsley.
- Season with salt and pepper to taste.
- Serve warm, or let cool to room temperature and garnish as desired.
Notes
Rinse quinoa to remove bitterness. Use vegetable broth for extra flavor. Store leftovers in an airtight container for up to 4 days, or freeze for up to 2 months.
