Description

A vibrant and healthy lentil salad bursting with fresh vegetables and a zesty dressing, perfect for any occasion.


Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 small red onion, finely chopped
  • 1 carrot, grated
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water to remove any dust or debris.
  2. Combine the rinsed lentils and water in a pot. Bring it to a boil over high heat.
  3. Reduce the heat to a simmer, cooking for about 20-25 minutes until tender.
  4. Drain the lentils in a colander and cool them down by rinsing under cold water.
  5. Mix the cooled lentils with the diced bell pepper, cucumber, red onion, grated carrot, and parsley in a large bowl.
  6. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  7. Pour the dressing over your salad, and toss everything gently to combine.
  8. Serve immediately or store in the fridge for a make-ahead meal.

Notes

For best flavor, allow the salad to chill in the fridge for 30 minutes before serving.
