Description

A delicious Low Carb Pizza Casserole that’s easy to prepare, perfect for family gatherings and weeknight dinners.


Ingredients

  • 1 lb lean ground beef
  • 8 oz pepperoni slices
  • 8 oz cream cheese, softened
  • 2 cups shredded mozzarella cheese
  • 1 cup low-sugar pizza sauce
  • 1 cup diced bell peppers (any color)
  • Optional: 1/4 cup sliced black olives
  • Optional: 1 tsp Italian seasoning
  • Optional: chopped mushrooms or spinach

Instructions

  1. Preheat your oven to 375°F and grease a 9×13-inch baking dish.
  2. Brown the ground beef in a skillet over medium heat for about 5 to 7 minutes.
  3. Drain the beef using a paper towel-lined colander to remove excess grease.
  4. Return the beef to the skillet (off heat) and stir in the softened cream cheese and pizza sauce.
  5. Spread the beef mixture evenly into the greased baking dish.
  6. Top with the diced bell peppers, shredded mozzarella cheese, and pepperoni slices.
  7. Bake uncovered for 20–25 minutes until bubbling and golden.
  8. Broil for 2 minutes for a crispy top, keeping a close eye to prevent burning.
  9. Cool for 5 minutes before slicing and serving.

Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
